Our Story

Mr. Pellegrini, an Italian immigrant, had a love for cheese. After years of trial and error he created his first spreadable cheese. It soon became a favorite among friends, neighbors and acquaintances. Mr. Pellegrini continued to make and deliver his famous cheese spread until he could no longer.

Concerned about the fate of his much-loved cheese spread, Chuck, a longtime customer of Mr. Pelligrini paid him a visit. On that blustery December day, Mr. Pelligrini passed his secret recipe onto Chuck. He too had a deep appreciation for quality and flavor, so he continued to experiment with the rich creamy cheese spread and eventually added 4 more flavors--Jalapeno, Garlic, Horseradish and Vegetable Garden. 

In 2022, Chuck decided it was time for him to pass the business on.  After seeing a post on social media that their much-loved cheese spread was about to disappear Allen and Gina Stoudt decided they needed to step in, Chuck’s Gourmet Cheese was a favorite in their house and the Illinois Valley, and they did not want to see it go.  In January 2023, Allen and Gina bought the business and the six secret recipes to continue on what Mr. Pelligrini and Chuck started.
